Braised Soya Sauce Chicken

Ingredients (Serves 2)
- 3 chicken thighs, with bone
- 10 garlic, skins removed
- 3 tbsp of light soya sauce
- 3 tbsp of dark soya sauce
- 3 tbsp of hua diao jiu
- 4 tsp of sugar
- 1 & 1/2 cup of chicken stock

Directions
1. Chop the thighs into 3-4 pieces.
2. Mix light & dark soya sauce, hua diao jiu & 2 tsp of sugar, set aside.
3. Heat a pot or pan at low fire for 1 minute.
4. Sprinkle garlic & remaining 2 tsp of sugar on & allow to melt for another minute.
5. Still on low fire, add the chicken pieces, skin side down, onto the sugar, to brown.
6. After another minute, flip the chicken over & spoon in mixture of soya sauce, hua diao & sugar.
7. Watch everything sizzle slightly, & settle down.
8. Add in chicken stock. Liquid should just cover the chicken.
9. Turn down to even lower fire, close lid & braise for 2 hours.
10. Stir & ready to be served.
