Ingredients (Serves 2)
- 2 boneless chicken thighs, cut into small pieces
- 1 tbsp of dark soya sauce
- 1 tbsp of light soya sauce
- 1 tbsp if hua diao jiu
- 1 tsp of sugar
- 1 tsp of bicarbonate soda
- 1 tsp of potato starch
- 1 tsp of sesame oil
- 5-6 thumb-sized slices of ginger
- 2 cups of purple onions, roughly chopped
- 6-8 stalks of spring onions
Directions
1. Marinate the chicken with all the seasonings, except ginger, onion & spring onion.
2. Heat oil & stir-fry the ginger & onions until frangrant. Make sure not to burn them by keeping fire medium & steady.
3. Add chicken & stir for a minute. Lower fire, add 1/4 cup of water & close lid for 5 minutes.
4. Throw in spring onions at the last minute & stir.
5. Turn off fire & serve immediately.
